Chicken Skewers with Low Carb Fries and Dip - Recipe - Diet Doctor (1)

These tasty chicken skewers with fries made of celery root (also known as celeriac) and a delicious spinach dip are a real treat! If you can't find celery root you can substitute them with rutabaga. Ingredients

Chicken skewers

  • 2 lbs 900 g boneless chicken thighs, cut into 1" (2.5 cm) pieces
  • 1 tsp 1 tsp salt
  • ¼ tsp ¼ tsp ground black pepper
  • 2 tbsp 2 tbsp olive oil
  • 1 tsp 1 tsp garlic powder
  • 1 tsp 1 tsp dried thyme
  • 8 8 wooden skewerwooden skewers

Celery root fries

  • 1¾ lbs 800 g celery root or rutabaga
  • 2 tbsp 2 tbsp olive oil
  • ½ tsp ½ tsp salt
  • ¼ tsp ¼ tsp ground black pepper

Spinach dip

  • ½ cup (3 oz.) 120 ml (90 g) Greek yogurt (4% fat)
  • ¼ cup 60 ml mayonnaise
  • 2 oz. 55 g frozen spinach, chopped
  • ¼ tsp ¼ tsp ground black pepper
  • 2 tbsp 2 tbsp dried parsley
  • 1 tbsp 1 tbsp dried dill
  • 1 tsp 1 tsp onion powder
  • ½ tsp ½ tsp salt
  • 2 tsp 2 tsp lemon juice

Making low carb simple

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Put the marinade ingredients in a bowl and mix. Add the chicken. Set aside and allow to marinate for 10–20 minutes at room temperature.

  3. Peel the celery root. Cut into 0.5" (1 cm) thick strips.

  4. Place the fries on a baking sheet lined with parchment paper. Season with salt and pepper. Drizzle with oil and mix everything thoroughly. Bake in the oven for 20 minutes to start with (about 50 minutes in total or until crisp).

  5. Thread the chicken on the skewers and spread them out on another baking sheet lined with parchment paper or preferably on a roasting rack. Put them in the oven together with the fries for 20-30 minutes or until they are cooked.

  6. To make the dip, remove the excess liquid from the thawed spinach. Add into a bowl and mix well with the other dip ingredients.

  7. Serve the chicken skewers with the celery-root fries and spinach dip. Garnish with some fresh thyme and season with salt and pepper to taste.

    Celeriac chips - fabulous in taste and texture was good too. I am definitely a convert to this vegetable and it makes a great alternative to green carbs. I almost feel like I am cheating and eating potato chips :-).

    Channelle - you can get celery root here, we just call it celeriac.

    Mame - I had the same concerns but they're only 9g per 100g according to nutritionist advice I received.

    With the fiber in celeriac the carbs balance out nicely so it really isn't an issue.

    Benjamin try some Buffalo sauce.

    1/4 cup melted butter
    1/4 cup hot sauce (I only use Frank’s)
    Dash of Worcester
    Garlic powder to taste

    Toss the cooked chicken in and stir.
    It’s not BBQ sauce but it’s damn tasty and has no carbs!

    The majority of the carbs in this dish come from the celery root - 15g carbs per serving, plus smaller amounts of carbohydrates from the other ingredients.
